Baked chicken breast
20 min hands-onFridge/Freezer · 3 momakes ~1.5 lb sliced chicken
One batch, 2-3 marinades (Italian, teriyaki, lemon, taco) — each flavor unlocks different dinners.
What you need
- 2 lb chicken breast
- 2 tbsp pesto (Italian batch)
- 2 tbsp soy sauce (teriyaki batch)
- 1 tbsp honey (teriyaki batch)
- 1 lemon (lemon-herb batch)
- 1 tbsp taco spice (taco batch)
- 1 lime (taco batch)
How to prep it
- Mix 2-3 different marinades in separate bowls — 5 extra minutes, and each flavor unlocks different dinners.
- Score the breasts in a crosshatch, about 1/2 inch deep. Split them across the marinades, coat well, rest 30 min (or up to 12 hours in the fridge).
- Wrap each breast in parchment like a candy wrapper — twist the ends closed. Bake 20 min at 400-425°F.
- Slice thin. Freeze in portions, labeled by flavor, up to 3 months.
- More marinade ideas: yogurt-curry, apple-mustard, creamy onion, balsamic, orange-rosemary — same method, new dinners.
